Festive frozen yoghurt bark done 3 ways
For the warm South African festive season, few snacks beat a good yoghurt bark when it comes to flavour, convenience and nutritional goodness. Yoghurt bark is made by spreading yoghurt on a baking sheet, topping it with your choice of mix-ins, and then freezing it. Here are three delicious festive-cheer bark recipes to bring a healthy, flavourful taste-sensation to everyone’s table.

1.Christmas-tree YogiPro bark
Indulge your taste buds with this delicious (and eye-catching!) bark, filled with the fresh taste of kiwifruit, strawberries and cranberries.
You’ll need:
- 600 g (3 pouches) YogiPro dairy snack
- 3 Kiwifruit
- 5 Strawberries (chopped into small pieces)
- 1 tablespoon dried Cranberries
Method:
- Thinly slice the kiwis and then, using a tree shaped cookie cutter, cut a tree from each slice.
- Line a rimmed baking tray with baking paper.
- Pour the yoghurt into the centre of the tray and spread evenly.
- Place the kiwi trees, strawberries and cranberries as desired onto the yoghurt.
- Freeze until completely solid (around 4 hours.)
- Cut into sections and serve.
- Place sections into a zip lock bag and store in the freezer.
2. A beautiful Christmas-wreath bark
This beautiful bark is not only delicious but can easily be the centre-piece of your festive table!
You’ll need:
- 600 g (3 packs) of YogiPro dairy snack
- 1 cup of blueberries
- 1 cup of strawberries
- 3 yellow kiwifruit
- 2 dragonfruit
- 1 punnet edible flowers
- Strawberry jam/left-over cranberry sauce
Method:
- Cut the strawberries, dragon fruit and kiwifruit into festive shapes and halve the bigger blueberries. Yellow kiwifruit looks especially good cut into star-shapes, while dragon fruit slices make perfect snow-flakes.
- Cover a large baking tray with non-stick baking paper and spread your YogiPro dairy snack in a thin, wreath-shaped layer over it, leaving a hole in the middle.
- Spread the strawberry jam or cranberry sauce on the wreath.
- Arrange the fruit, blueberries and edible flowers all around the wreath, decorating as you go.
- Place the wreath in the freezer for between 2-4 hours until frozen.
The wreath bark can be the perfect centrepiece for a festive table, but always keep room temperature in mind.
3. Ginger-bark cookies
Ginger biscuits and the festive season go hand-in-hand. Try this nutritious and tasty variation on a Christmas-classic.
You’ll need:
- 600 gr (3 pouches) of YogiPro Vanilla dairy snack
- 1 tablespoon ginger essence
- Granola or mixed nuts and dried fruits of your choice
Method:
- Mix the YogiPro with the ginger essence.
- Spoon the YogiPro/ginger mix onto a silicone baking sheet.
- Sprinkle the granola/nuts/dried fruit on top.
- Place in the freezer for between 2-4 hours, until frozen solid.
- Take out of the freezer, let it stand for 5 minutes and enjoy.
Some tips to remember when making your festive-season bark:
- Use a thicker, less watery dairy snack, such as YogiPro, for a smoother, creamier bark. Less water prevents the bark from becoming icy.
- The same goes for toppings. Fruit is mostly water, so keep toppings lighter to ensure a more consistent bark.
- Yoghurt bark should freeze between 2-4 hours, depending on the thickness of the spread, toppings mixed in, and the freezer itself.
- Bark is at its best when eaten 5 to 10 minutes (weather depending!) after it comes out of the freezer. Speaking of which – bark can be kept in a sealed container for up to three months in a freezer, making it the perfect summertime indulgence.
